Ryan’s Favorite Vegan Beer Cabbage Soup

- 3 to 4 cups cabbage (I like to use a mix of purple and green but any works I just like it colorful.)

- 2 cups diced potatoes

- 1 large onion diced

- 1-5 whole jalapeño peppers diced depending how much spice you like

- 1 bell pepper diced

- I can of diced tomatoes

- 14 oz impossible ground sausage

- 24-32 oz of beer (I used bud light but a dark stout does bring this up to a whole other level)

- 1 cup of sugar or equivalent (I have even used Splenda and it’s still amazing)

- Salt and pepper to your preference

- Always sriracha liberally

Cook sausage, onions, and peppers in soup pot until sausage is cooked and onions are translucent. Add the rest of the ingredients and beer to pot. Boil until potatoes and cabbage are tender. Freaking enjoy this with some beer bread if you’re not watching your carbs like this guy!!
