Mexican Coleslaw
In large mixing bowl stir in the following ingredients:
1 can of black beans drained
1 bag of shredded red cabbage
1 bag of angel coleslaw
2 cups of grape or cherry tomatoes cut in half
1 diced red pepper
1 jalapeno pepper chopped
1 cup of blackened sweet corn (pre-heat skillet, add olive oil, frozen sweet corn, splash of beer, pinch of red cayenne pepper(seasoned to liking) Stir together. Cook until blackened on both sides, cool and add to salad mixture)
Mix together and then stir in the rest of ingredients
In a small bowl combine the following ingredients:
1/3 cup of sour cream
1/2 cup of mayonnaise
1 tablespoon taco seasoning
1/2 squeezed lime
Add mixture to salad mixture and stir. Enjoy!
